Every year around this time, I try to clear off my plate…working plate that is, so that I can fill this plate with wonderful goodies.
My Christmas baking (sweets) is usually very simple. I have several recipes that are always in demand – with one main requirement – that I make tons! The shortbread cookies are by far the favorite. I don’t know that my recipe is any different than yours or anyone else’s but I can count on these turning out beautifully each time I make them. My oldest son has become a shortbread connoisseur and often takes over the baking of these gems.
This recipe came from an old friend of the family who was well known for her luscious melt in your mouth pure white discs. I’m so going to have get started on making these.
- 2 cups soft butter
- 1 c icing sugar
- 3 cups flour
- 1/2 cup cornstarch
Whip soft butter until fluffy and super creamy. Add icing sugar and Corn starch. Whip again until fluffy. Slowly add flour in small parts. The original recipe called for dropping by spoonfuls on an ungreased cookie sheet.
I either roll the dough out like pastry and use a shot glass to cut small discs or roll into a thick log and slice off bigger discs.
Bake at 325 degrees for close to 15 minutes. Do keep an eye on them as they will turn color quickly. They are done when they are still white on top and the bottoms are golden.
Spicy Shortbread Variation
- 4 tsp cinnamon
- 2 tsp nutmeg
- 1 tsp allspice
- 1 tsp cardamon
Follow directions as above and realize that these will be lighter in color than gingerbread and close to a spice cake color when fully done. Again, do not over bake!
I also cut these slightly differently. I do often roll small strips and cut into nuggets and also into bars like pictured above.
You can freeze both variations very well. In fact freezing them for a week seems to age them beautifully. That just means you have to make more. Enough to scoff for the week until the ones in the freezer come out AND the ones that are going in the freezer!
